Simple zucchini fritters

Ingredients for 4 servings:

  • 700 g zucchini
  • 2 potatoes
  • 2 carrots
  • 2 onions
  • 1 garlic clove(s)
  • 2 tsp, heaped herbs, e.g. parsley, mint, chives
  • 150 g flour
  • some salt and pepper
  • some paprika powder
  • some oil

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

delicious and vegan

Wash and trim the zucchini. Peel the potatoes, carrots, and onions. Coarsely grate all ingredients and mix in a bowl. Peel and finely chop the garlic, and stir in. Add the flour and knead the mixture until the liquid from the vegetables sticks to the flour. Add the herbs and season with salt, pepper, and paprika. Heat the oil in a pan and fry the pancakes until crispy on both sides, pressing gently on the pancakes occasionally. Place on kitchen paper to drain. Serve with herb curd, for example.
