Ingredients for 1 servings:
- 30 g carrot(s), net
- 35 g parsnip(s), net
- 60 g potatoes, net
- 45 g celeriac, net
- 40 g leek, fresh, net
- 15 g onion(s), net
- 1 tsp rapeseed oil, alternatively sunflower oil
- 300 ml vegetable broth, homemade, strongly seasoned
- 10 g herbs, mixed, frozen
- Salt
- Pepper, colorful, from the mill
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Hearty vegetable soup
Heat oil in a pan, fry the diced onion until lightly browned, then deglaze with stock. Dice or slice all the vegetables and gradually add them to the stock. Bring to a boil once, then simmer on low heat with the lid on for about 20 minutes. After this time, season to taste, stir in the herbs, and enjoy immediately.
