Skewers with peanut sauce

Ingredients for 9 servings:

  • 750 g pork schnitzel
  • 50 ml coconut milk
  • 6 tbsp soy sauce
  • 2 m.-sized onion(s)
  • 2 garlic cloves
  • 4 tbsp oil
  • 4 tbsp peanut butter, chunky
  • 400 ml water
  • 2 tsp lemon juice
  • 1 tsp sambal oelek
  • Sugar
  • 1 red chili pepper(s)
  • 2 tbsp peanuts
  • pepper

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 15 minutes

Cut the meat into thin, 2-3 cm wide strips. Mix the coconut milk and 4 tablespoons of soy sauce. Let the meat simmer for about 30 minutes. Peel and dice the onions and garlic, and fry in 2 tablespoons of oil. Stir in the peanut butter and 400 ml of water and simmer for about 5 minutes. Season with lemon juice, sambal oelek, sugar, pepper, and 2 tablespoons of soy sauce, and keep warm. Pat the meat dry and thread it onto skewers in a wavy pattern. Fry in 2 tablespoons of oil on each side for about 2 minutes. Wash, chop, and sprinkle the chili. Chop the nuts. Sprinkle the sauce over the chili and serve.
