Ingredients for 1 servings:
- 250 g Skyr
- 25 g spelt semolina
- 2 eggs
- 15 g erythritol (sugar substitute)
- some vanilla extract or flavor drops
- 1 handful of berries, e.g. raspberries or blueberries
- 1 tsp coconut oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Protein bomb
Preheat the oven to 180°C (top/bottom heat). Grease a baking dish with coconut oil. Separate the eggs. Beat the egg whites until stiff peaks form. Beat the egg yolks together with the sugar substitute and the vanilla extract or flavor drops until frothy. Then stir in the skyr and sprinkle in the semolina. Finally, fold in the beaten egg whites. Pour the batter into the dish, scatter the berries on top, and bake for about 20 minutes until golden brown. I don’t like it too dark, so the specified time is enough for me. The casserole tastes good hot or cold and makes a very filling breakfast. It also satisfies a craving for a sweet treat in between meals and is high in protein.
