Sliced ​​meat with vanilla curry sauce

Ingredients for 3 servings:

  • 500 g pork fillet(s), chicken breast fillet or turkey schnitzel
  • 250 g cherry tomatoes
  • 4 spring onions
  • 1 vanilla pod(s)
  • 2 tbsp butter
  • 1 tbsp, heaped curry powder
  • 120 ml cider or unsweetened apple juice
  • 250 ml cream
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the meat into strips about 1 cm wide. Wash and halve the tomatoes. Wash, trim, and finely slice the spring onions. Split the vanilla pod lengthwise, open it, and scrape out the seeds with the back of a knife. Cut the pod into 4 pieces. Heat a large pan on the stovetop. Melt the butter over medium heat. Stir in half of the meat strips and fry for about 2 minutes, stirring occasionally. Remove from the pan and fry the remaining meat in the same way. Remove from the pan as well. Now add the onions and pod pieces to the pan and fry for 1 minute. Add the curry and vanilla seeds, stir well, and fry briefly. Pour in the cider or apple juice and the cream and bring back to a boil. Stir in the tomatoes, season with salt and pepper. Mix in the meat and let it simmer in the sauce for 2 minutes over low heat. Season to taste and serve with rice or pasta.
