- 1 piece Egg XL from the farm
- 3 piece Bacon slices 1
- 0,5 liter Salted water
- 1 tbsp Vinegar
- 2 Pinches Chili powder
- 2 Pinches Pepper
- 1 Handful Chives rings
- Garlic sauce
- I have heard of Eier Benedict several times in books. When I saw what it is Poached egg on toast with fried bacon and hollandaise souce was clear to me, so I’ll change something. Instead of toast, I use a halved wholemeal beef, instead of the hollandaise I have garlic cream. I bring half a liter of water to a boil with a tablespoon of vinegar and a pinch of salt. I sear the bacon and season it with paprika and chilli and pepper. I crack open the egg and carefully slide it into a ladle. I add it to the boiling water and let it steep for 5 minutes. I put the bacon briefly on a piece of kitchen paper and then on the tip. I lift the poached egg on top and season it again with the above. Spices. Now the sauce on top and you’re done. I garnished it with leek rings. Friends that tastes absolutely leggy. Try it out.
