Ingredients
 

for smoked pork schnitzel

  • 500 g Kasseler in one piece
  • 1 piece Red onion
  • 1 bunch Thyme
  • Pepper
  • Lemon zest

for frying

  • Clarified butter

for kohlrabi sticks

  • 3 medium sized Kohlrabi
  • Sea salt
  • Star anise
  • Mace
  • 50 ml. Cream 10%
  • Condensed milk 10%
  • Butter

for mashed potatoes

  • 300 g Floury potatoes
  • Nutmeg
  • Salt
  • 100 ml. Cream 10%
  • Butter

for a fine sauce

  • A touch of chilli
  • Soy sauce
  • Balsamic cream
  • A dAsh of creAm
  • Natural binder if necessary

Instructions
 

Preparation step 1:

  • You start by preparing the meat. For this purpose, the onions are cut into cubes and then fried in the clarified butter. Now they take the Kasseler and add it. Already scorched on all sides. Now they season the meat and put it in the preheated oven at 180 degrees for the next 20 minutes.

Preparation step 2:

  • In the meantime, the kohlrabi and potatoes are peeled. Quarter the potatoes and cook in salted water for about 15 minutes. Cut the kohlrabi into sticks about 2 cm thick. In a pan that has been spread with butter, this is now sweated evenly on all sides. Now add some water to deglaze and season the vegetables. Let simmer for 10 minutes in the closed pot.

Preparation step 3:

  • The meat will now be ready to be taken out of the oven. Cut it into even slices. In the remaining stock, heat the cream and balsamic vinegar and soy sauce. Add a little chilli and some lemon zest. Now reduce until it is almost lumpy. Then fill up with two cups of water and if everything has gone well, the sauce with the meat is perfect. If necessary, help again with water and / or binding agent. Put in the meat slices and set aside with the lid closed. Now mash the potatoes with the ingredients listed and season with nutmeg. Take the kohlrabi out of the pot and sift through the sauce briefly and thicken if necessary.
