Fried Sheep’s Cheese on Rocket

Ingredients
 

  • 200 g Sheep milk cheese
  • 8 leaves Rice paper
  • Radicchio
  • 0,5 Turkish peppers
  • 0,5 Spring onion stick
  • 1 Clove of garlic
  • 8 Rosemary needles
  • Clarified butter for deep-frying.
  • ...
  • 1 bunch Ruccola
  • 100 g Tomatoes
  • 1 tablespoon Olive oil
  • 0,5 tablespoon Fig balsamic vinegar
  • Chili threads

Instructions
 

  • Cut the sheep's cheese into finger-thick slices. Cut the bell pepper and spring onion into rings. Chop the garlic and rosemary.
  • Soak the rice paper individually in water for a few seconds. Drain and transfer to a plate. Place a lettuce leaf in the middle. Cover the lettuce leaf with a slice of sheep's cheese, rosemary, garlic and the pepper and spring onion rings. Cover with a lettuce leaf.
  • Wrap the rice paper 2 cm on the sides. Put the long side of the rice paper over the filling, roll up and press down a little. Fry in clarified butter for about 4 minutes and carefully remove with a slotted spoon and drain.
  • Place the rocket with a few chilli threads and the tomatoes on a plate and drizzle with a little olive oil and balsamic vinegar. Place the fried sheep's cheese on top of the salad.
