Smoked salmon in a wok

Ingredients for 6 servings:

  • 750 g salmon fillet(s), fresh
  • 30 g tea, green, non-fermented or smoked

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Remove the skin from the salmon fillet. Rinse the fillet under cold running water and dry thoroughly. Remove any remaining bones and divide the fillet into 6 equal portions. Line a wok with aluminum foil. Add the tea and heat on the stovetop until it begins to smoke. Arrange the fillet portions on the wok grate and cover. Reduce the heat slightly and smoke the fillets for about 30 minutes. During this time, set the extractor hood to full power. Season the salmon fillets to taste and serve lukewarm.
