Smokey's pumpkin in orange-cognac sauce

Ingredients for 2 servings:

  • 400 g pumpkin(s), cut into cubes
  • 100 ml broth
  • 100 ml orange juice, freshly squeezed
  • 20 ml cognac
  • 2 tbsp, heaped crème fraîche
  • 1 tbsp oil
  • 1 small onion(s), finely chopped
  • 1 clove(s) garlic, squeezed
  • 1 tbsp pepper, green, dried
  • 1 pinch(s) nutmeg
  • 2 sprigs of thyme, leaves picked
  • n. B. clove pepper, from the mill
  • n. B. Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Delicacy in autumn

Sauté the onion and garlic in the hot oil for about 2-3 minutes. Add the pumpkin cubes and sauté for another 2-3 minutes. Deglaze with the cognac, stock, and orange juice. Cover and simmer until the pumpkin is tender, about 10 minutes. Add the nutmeg, thyme, and coarsely ground green pepper, and stir in the crème fraîche. Heat everything thoroughly for about 5 minutes; do not boil. Season to taste with salt and pepper.
