Smokey's stuffed curry apricots

Ingredients for 12 servings:

  • 12 apricot(s), ripe
  • 12 small mozzarella balls
  • 1 tbsp sherry
  • 1 tbsp olive oil
  • 1 tsp, heaped curry powder
  • 12 slices of breakfast bacon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wonderfully fruity

Carefully slice the apricots, leaving the two halves together, and remove the stones. Mix the curry powder with the sherry and oil and coat the mozzarella balls with it. Place the mozzarella balls into the apricots, wrap them in bacon, and thread them onto small wooden skewers. These can then be grilled (approx. 5-10 minutes, turning once), in a frying pan (approx. 10 minutes, turning once), or oven-baked (220 degrees Celsius, approx. 10-15 minutes, turning once) until the bacon is nice and crispy. If you can’t find mini mozzarella balls, you can cut the regular mozzarella into small pieces.
