light and healthy
Cut the zucchini into sticks (approx. 4 x 1 cm). Cut the onions into thin wedges and the garlic into fine slices. Grate the lemon zest and squeeze out the juice. Finely chop the rosemary and chili. Pick the thyme leaves. Heat the olive oil in a frying pan and fry the zucchini sticks. Add the onions and garlic, chili and rosemary, and fry. Season with salt, pepper, and a small pinch of sugar. When the zucchini are cooked but still firm to the bite, add the thyme, 1-2 tablespoons of stock, lemon zest, and 1 tablespoon of lemon juice. Continue frying on high for 1-2 minutes and season again to taste. This goes well with briefly pan-fried meat or fish. It also tastes good with just green zucchini if you don’t have yellow ones.
