Mountain lentils: It is best to soak them overnight
Lentils are part of many recipes. In order for mountain lentils to soften more quickly, it is best to soak the legumes in water overnight.
- Pour desired amount into a plate or metal bowl.
- Pour enough water on the lentils until they are completely covered with water.
- Then let the mountain lentils soak for 12 to 24 hours. This works best overnight.
- The next day, drain the water and rinse the lentils with fresh water.
- Note, however, that many of the nutrients in mountain lentils get into the water when they are soaked. It is therefore sometimes useful to use the soaking water for cooking.
- However, toxins from the mountain lentils can also get into the soaking water. Depending on whether you use organic lentils or not, you should consider whether you want to use the water for cooking.
