super juicy
Grate the zest and juice one orange. Mix and set aside. Do the same for the other two oranges. Also set aside. Mix the semolina, almonds, flour and baking powder. Beat the eggs and sugar with a hand mixer on high speed until creamy. While continuing to beat, mix in the melted butter and the juice and zest of one of the oranges, then slowly stir in the flour mixture. Line a 26/28 cm springform pan with baking paper, pour in the batter and bake at 180°C for about 35-40 minutes. Be sure to do the skewer test!! Bring the juice from the other two oranges to a boil. Let the finished cake cool slightly until the middle has sunk slightly. Spread the hot orange juice over the cake and let it soak in well. Tastes best the next day when it has had a good soak.
