Soft cheese with sesame breading on arugula

Ingredients for 4 servings:

  • 2 packs of soft cheese or shepherd’s cheese
  • 100 g sesame seeds
  • 2 bunches of arugula
  • ½ onion(s), red
  • 400 g cocktail tomatoes
  • 400 g mushrooms, white
  • Balsamic vinegar (strawberry balsamic vinegar)
  • salt and pepper
  • Rapeseed oil

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash the arugula, cut into bite-sized portions, and divide evenly among all the plates. Slice the onion into rings and divide evenly among all the plates. Halve the tomatoes and slice the mushrooms into strips. Place in a pan with a little oil. Cut the soft cheese into small, bite-sized pieces. Place the sesame seeds in a small saucepan and toast, stirring occasionally. After about 12 minutes, remove from the heat, season with pepper and salt, optionally add some basil, and divide evenly among all the plates. If desired, add some crushed garlic. Remove the toasted sesame seeds from the heat. Prepare a bowl with olive or rapeseed oil. Roll the cheese pieces first in oil and then in sesame seeds. Divide evenly among the plates and serve drizzled with a little strawberry balsamic vinegar.
