Cod with boiled potatoes and mustard sauce

Ingredients for 4 servings:

  • 1 ½ kg cod, fresh
  • 4 ½ liters of water
  • 500 g potatoes
  • 2 tbsp mustard, medium hot
  • 1 large onion(s)
  • 9 peppercorns
  • 9 allspice berries
  • 5 bay leaves
  • 1 tbsp butter
  • 1 tbsp flour
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

For the fish, bring about 4.5 liters of water to a boil with allspice, pepper, bay leaves, and plenty of salt. Let the cod simmer in the stock over low heat for about 20 minutes. Do not boil. Peel the potatoes and boil them in salted water for about 20 minutes. For the sauce, about 10 minutes before the fish is cooked, make a roux of butter, flour, and fish stock. Add the mustard and season with sugar, salt, and pepper.
