Ingredients for 4 servings:
- 2 tbsp oil (soybean oil)
- 1 bunch of spring onions
- 5 garlic cloves, crushed
- 1 tbsp ginger root, grated
- 2 tbsp curry powder
- 1 tsp cinnamon powder
- 1 tsp coriander powder
- 500 g lean minced beef
- 3 m.-large tomato(s)
- 3 large eggs
- 1 pinch of salt

In the Middle East it is served for breakfast – here it is a main course
Separate the spring onions from the green parts, peel them, and slice into rings. The green parts also slice into rings and set aside. Peel the garlic cloves and press them through a garlic press. Peel and grate the ginger root. Slice the chili peppers lengthwise, remove the seeds, and also cut them into strips. First, add the curry, cinnamon, and coriander to the heated oil until fragrant. Then fry the onions, garlic, and ginger. Add the minced meat and fry until crumbly. Then add the onion greens. Season with salt. Cut the tomatoes into boats, add them to the pan, and simmer for a while. Beat the eggs, add a little salt, and let them set. Serve with basmati rice. If you have coriander leaves, garnish the rice with them; otherwise, garnish with a sprig of parsley.
