Minced meat with eggs

Ingredients for 3 servings:

  • 25 g butter
  • 200 g onion(s), sliced
  • 50 g bell pepper(s), green, finely chopped
  • 100 g tomatoes, peeled and diced
  • 150 g minced beef
  • n. B. Salt
  • 1 tbsp parsley, chopped
  • 100 ml water
  • 6 eggs

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the butter in a 30 cm diameter pan. Fry the onion slices for 3-4 minutes until golden brown. Add the minced meat and bell peppers and fry for 8-10 minutes (until the meat juices have reduced). Season with salt and fry for another 2 minutes, stirring frequently. Add the parsley, tomatoes, and water. Cover and bring to a boil. Then reduce the heat and simmer for 10 minutes. Use a spoon to make 6 indentations in the mixture (preferably around the edges) and crack an egg into each one. Sprinkle a little salt on each egg, replace the lid on the pan, and cook the eggs over very low heat for 4-5 minutes. Serve immediately while hot.
