Soup: Asian Coconut Soup with Chicken

- 200 ml Chicken stock
- 2 Chicken fillets
- 400 ml Coconut milk
- 1 Onion
- 8 toes Fresh garlic
- 4 El Soy sauce
- 2 Poles Lemongrass
- 1 Lime
- 1 pcs Ginger
- 1 bunch Coriander
- 200 g Oyster mushrooms
- Fish sauce
- Chilli red, roughly chopped
- Bend the lemongrass, then bring to the boil with the stock and the ginger and let it steep a little.
- Cut the chicken into small pieces, press the garlic through the press and mix with the soy sauce, then marinate the chicken in it.
- Cut the onion into slices and sauté in a pan with a little sesame oil, then fry the oyster mushrooms (cut into small pieces).
- Sift the stock and then add to the mushrooms, top up with the coconut milk, bring to the boil and then add the chicken and let it simmer.
- Chop the herbs and then add to the soup with lime juice, soy sauce, fish sauce and chilli to taste.
