Ingredients for 6 servings:
- 75 g pearl barley
- 100 g broccoli
- 100 g cauliflower
- 1 liter vegetable broth
- 200 ml coconut milk, optional
- salt and pepper

Cook the pearl barley in a little vegetable stock according to the package instructions (approx. 20 minutes). Meanwhile, prepare the cauliflower and broccoli and cut into small, spoon-sized pieces. Strain the pearl barley and rinse with cold water to remove any starch. Add the pearl barley, broccoli, and cauliflower to the pot and add the coconut milk and vegetable stock. Simmer until everything is softened and season with salt and pepper. Tip: I also added soup noodles.
