Ingredients
 

For seasoning:

  • 2 tbsp Vegetable oil
  • 1 Red Onion
  • 1 Clove of garlic
  • 1 pole Leek
  • 1 Green peppers
  • 1 Peppers yellow
  • 3 tbsp Tomato paste
  • 1,5 l Vegetable broth hot
  • 1 small can Chopped tomatoes
  • 1 shot Red wine vinegar
  • 200 g Processed cheese "Garlic Herbs"
  • 150 g Processed herb cheese
  • 1 Handful Freshly chopped basil
  • Salt, black pepper from the mill
  • 1 pinch Sugar
  • 1 pinch Cayenne pepper
  • 1 tsp Italian spice mix
  • 1 tsp Smoked paprika powder
  • 1 tsp Sweet paprika
  • 1 tsp Honey

Instructions
 

  • Peel the onion and garlic clove and dice finely. Clean and wash the peppers and leeks. Cut the leek into rings and dice the bell pepper.
  • Heat the oil in a large saucepan and fry until crumbly. After 5 minutes add the cut vegetables and fry for 5-7 minutes. Stir in tomato paste and roast for 1-2 minutes.
  • Deglaze with the hot vegetable stock, the chopped tomatoes and the red wine vinegar. Bring everything to the boil, lightly season with salt and pepper. Stir in sugar, cayenne pepper, Italian spice mixture and paprika powder. Simmer over medium heat for about 15 minutes, stirring occasionally.
  • Put the processed cheese in the pan and heat it up. Season the soup again to taste and match with the honey. Finally stir in the basil. Arrange the soup in portions in deep plates and serve. Bon appetit and have fun cooking at home!
