  • 7 Potato
  • 7 Eggs
  • 2 Red Onion
  • Olive oil

Instructions
 

  • Peel the potatoes and cut into thin slices. Peel the red onions and cut into half rings. Pour olive oil into a pan (the pan shouldn't be too big) until the bottom is very well covered. Put the potatoes in the pan and possibly add more olive oil until the potatoes are almost covered. Let cook over medium heat for about 15 minutes (stirring constantly). Halfway through the cooking time, add the onions and stir in well.
  • In the meantime, whisk the eggs and season with salt and pepper. When the potatoes are cooked, place them in a colander (to remove the excess oil) and then return them to the pan. Then pour the crushed eggs over it. Swirl the pan frequently so that the mixture does not stick. After about 5 minutes, turn the mass (I put a large flat plate on the pan and quickly turn it over and put the mass back into the pan). Let the tortilla cook again for about 5 minutes and serve either warm or cold! Tip: You can also spice up the tortilla very well with chorizo. Then just cut the chorizo ​​into slices and add to the potatoes just before the egg is added. Smoked salmon also goes very well with it!
