Ingredients for 2 servings:
- 300 g beans, green broad or stalk, chopped
- 300 g potatoes, peeled and diced
- 1 small onion(s), diced
- 1 tsp lard, e.g. goose or pork
- Salt
- pepper
- ⅛ ml vegetable broth
- 1 shot of apple cider vinegar
- 1 tsp savory, dried, shredded
- Sugar or sweetener (saves calories!)
- a little Maggi or Worcestershire sauce
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
own version, because pickled ones are too sour and too much
Melt the lard in a pot, sauté the onion. Add the diced potatoes, season with pepper, and pour in the vegetable stock. Stir in the beans and simmer for about 30 minutes, until everything is nice and soft and creamy. Then stir in the savory and apple cider vinegar, which approximates the flavor of sour beans, but not as strong as lactic acid fermented beans. Season to taste with salt, sweetener, and Maggi. Serve with cutlets, mettwurst, or similar.
