Endive as a vegetable

Ingredients for 4 servings:

  • 1 head of lettuce (endive)
  • salt and pepper
  • Light sauce for thickening (or roux)
  • nutmeg

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cut the endive into wide strips. Do not drain, but add it directly to the pot with the salt. Cook for about 5-10 minutes. Then thicken with the light sauce and season to taste. Of course, you can also make a roux instead of the light sauce. It tastes best with boiled potatoes and meatballs (minced meat sandwiches).
