Sour cherry marzipan dark chocolate jam

Ingredients for 1 servings:

  • 750 g sour cherries, frozen
  • 60 g marzipan
  • 350 g gelling sugar 2:1 (gelling cane sugar)
  • 30 g dark chocolate, min. 70% cocoa content

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 22 minutes

Thaw the sour cherries and blend them with the marzipan and cane sugar in a blender. Finely chop the chocolate. Bring the sour cherry mixture to a boil in a saucepan, stirring continuously, and simmer for 5 to 7 minutes. Use a large saucepan for best results. Finally, stir in the dark chocolate pieces. While still piping hot, pour into hot, rinsed jars. Immediately close each jar and turn it upside down. The rims must be clean and dry, and the jars should be filled to the brim. After 10 minutes, turn the jars over.
