Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 large onion(s)
  • 40 g clarified butter
  • 60 g flour
  • 1 liter meat broth
  • Vinegar
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onion and fry in hot fat, dust with flour, and brown the roux well. Deglaze with the meat broth, stirring with a whisk, bring to a boil, and season with salt and pepper. Peel the raw potatoes and thinly slice them. Add them to the sauce and cook for about 20 minutes, until tender. Season with salt, pepper, vinegar, and nutmeg, and let stand briefly.
