Sour – spicy – soup

Ingredients for 6 servings:

  • 300 g chicken
  • 500 g minced meat, mixed
  • 200 g soy sprouts
  • 1 point glass noodles
  • 2 tbsp broth, granulated
  • ½ bottle of soy sauce
  • ¼ bottle of tomato ketchup
  • 1 tsp sambal oelek (very hot)
  • 1 bunch of spring onions or chives
  • 2 carrots
  • salt and pepper
  • Vinegar
  • Sugar

Cook the chicken in 2 liters of lightly salted water until tender. Soak the glass noodles in cold water; when tender, drain, and finely chop. Brown the minced meat in a little oil with salt and pepper. Remove the cooked chicken from the broth and finely chop. Stir the granulated stock, soy sauce, ketchup, and 1-2 teaspoons of sambal oelek into the chicken broth and season with sugar, vinegar, salt, and pepper. The soup should taste sweet, sour, and spicy and appear dark. If it is too light, add more soy sauce and ketchup. Add the minced meat, chicken, and glass noodles to the soup. Coarsely grate the carrots and finely chop the spring onions, then add both. Bring back to a boil briefly and season to taste.
