Soy strips gyro style

Ingredients for 3 servings:

  • 500 g soy shreds
  • 1 ½ liters vegetable broth
  • 20 g chicken seasoning
  • 10 g smoked paprika powder
  • 75 ml oil
  • 5 g chili powder
  • 5 g cumin
  • 25 ml soy sauce

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Bring 1.5 liters of water to a boil in a kettle. Pour the water into a bowl and stir in 6 teaspoons of vegetable stock. Add the soy shreds to the stock and let it simmer for about 30 minutes. Stir occasionally, otherwise the surface will dry out. Prepare the marinade in a second bowl. Add the oil and soy sauce and mix in the seasonings. After about 30 minutes, separate the soy shreds from the remaining liquid using a salad spinner. (Be careful, since the soy meat will now have tripled its weight, you’ll need a sturdy spinner!) Add the soy shreds to the bowl with the marinade and mix everything well. The finished “gyro” tastes best fried. It can also be added cold to a salad or simply heated in the microwave. It can also be frozen.
