Spaghetti à la Ursula

Ingredients for 4 servings:

  • 500g spaghetti
  • 6 cubes of leaf spinach, frozen
  • 2 tbsp tomato paste
  • Broth, granulated
  • Salt
  • oil
  • Herbs as desired
  • Cheese, grated
  • possibly onion(s)
  • possibly garlic

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with leaf spinach and light tomato sauce

Bring water with salt and oil to a boil and add the spaghetti. After about 5 minutes, add the frozen spinach cubes (6-12 cubes depending on the desired amount and size) and cook the spaghetti and spinach until cooked through, stirring constantly. Drain and toss with a little oil. For the light tomato sauce, add oil to the pan and let the tomato paste simmer briefly. Season with salt and stock, top up with water to the desired consistency, and simmer briefly. Garnish with herbs, if desired. Mix the spaghetti with the sauce and serve with grated cheese. If desired, you can also sauté onions and/or garlic before adding the tomato paste. This recipe also tastes great with whole-wheat pasta!
