Ingredients for 4 servings:

  • 500 g spaghetti or spaghettoni
  • 200 g Parmesan, freshly grated, or Pecorino
  • Salt and pepper, coarsely ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the spaghetti in plenty of salted water until al dente. Reserving the cooking water, drain the water. In a well-warmed bowl, pour a ladleful of the cooking water over the spaghetti and carefully stir in some Parmesan or Pecorino cheese. Then add a little more water and some cheese. Continue this process until the spaghetti is generously coated in a creamy cheese sauce. Finally, add plenty of freshly ground pepper.
