Ingredients for 4 servings:
- 450g spaghetti
- Water (salt water)
- 125 g bacon, diced
- 4 slices bacon (pancetta or bacon), cut into small pieces
- 100 g Parmesan
- 100 ml cream
- 4 egg yolks
- salt and pepper
- olive oil
- 1 onion(s), diced
Instructions

we Italians love this dish
Cook the spaghetti in salted water. Fry the bacon cubes and pancetta or bacon (with onion if desired) in olive oil. Mix the cooked spaghetti with the bacon and onion mixture. Important: Let the spaghetti and bacon mixture cool slightly so the eggs don’t curdle! Whisk the egg yolks with the cream and 50g of Parmesan cheese, season with salt and pepper. Mix the spaghetti and bacon mixture with the egg and cream mixture. Then stir in the remaining Parmesan cheese and serve immediately.
