Spaghetti Carbonara with cream

Ingredients for 4 servings:

  • 500g spaghetti
  • 150 g pancetta, finely chopped
  • 1 onion(s), finely chopped
  • 200 ml cream
  • 1 tbsp sour cream
  • 3 eggs
  • 100 g Parmesan, grated
  • 1 tbsp butter
  • n. B. Pepper, black
  • n. B. Nutmeg
  • n.e. paprika powder, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Sauté the pancetta with the finely chopped onion until the bacon is crispy. Meanwhile, combine the cream with the sour cream, eggs, and Parmesan cheese, and season with pepper, nutmeg, and paprika, if desired. Cook the spaghetti in salted water as usual. Drain when al dente. Now fold in the pancetta and onions. Then, stirring constantly, add the cream mixture and let it thicken slightly. Tip: If necessary, return the pan to the hot stovetop.
