Spaghetti in asparagus sauce

Ingredients for 4 servings:

  • 150 g raw ham
  • 1 large onion(s)
  • 500 g asparagus, white
  • 2 vegetable stock cubes
  • 250 ml cream
  • 50 g hard cheese, grated, possibly more
  • some salt and pepper
  • some oil
  • some flour
  • 500g spaghetti

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel the asparagus and cook in salted water for 8 minutes. In the meantime, dice the ham and fry in oil. Finely chop the onion and add to the ham. Briefly fry both until browned and dust with flour. Remove the asparagus from the salted water and puree it finely with a little of the cooking water. Add to the pan and pour in the cream. Add the vegetable stock cube, then the grated hard cheese, and season with salt and pepper. In the meantime, cook the pasta as usual until al dente, then add to the asparagus sauce and mix well in the pan. Season again and serve.
