Spaghetti – tomatoes – arugula – salad with rosemary

Ingredients for 5 servings:

  • 500g spaghetti
  • 500 g cocktail tomatoes
  • 1 bunch arugula
  • 2 points mozzarella
  • 1 onion(s), red or 2
  • mayonnaise
  • olive oil
  • Sugar
  • Balsamic vinegar
  • salt and pepper
  • rosemary

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the spaghetti until al dente and let cool. In the meantime, wash and dry the arugula, removing the stems. Cut the mozzarella into bite-sized cubes, finely chop the onions, and halve or quarter the cherry tomatoes to taste. Mix everything with the spaghetti. Mix mayonnaise, olive oil, balsamic vinegar, rosemary, and spices to make a marinade; it can taste slightly sweet from the sugar. Mix the marinade into the ingredients. It tastes delicious immediately, but it’s even better once the salad has marinated. Season again before serving.
