Tortelloni – peppers – salad

Ingredients for 4 servings:

  • 500 g tortellini (cheese tortelloni), fresh from the refrigerated section
  • Salt and pepper, white
  • 3 small bell peppers
  • 125 g feta cheese
  • 2 tbsp sunflower seeds
  • 2 tbsp mayonnaise (salad mayonnaise)
  • 150 g yogurt (full milk yogurt)
  • 2 tsp pesto or Italian herbs (frozen)
  • basil for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring plenty of salted water to a boil, add the tortelloni, and heat for about 1 minute. Drain and let cool. Trim and wash the peppers and cut into short strips. Dice the feta cheese. Roast the sunflower seeds in a dry pan. Mix the mayonnaise with yogurt and pesto or herbs and season with salt and pepper. Mix the tortelloni with the peppers, cheese, and sauce. Arrange the tortelloni salad on a platter and sprinkle with the sunflower seeds. Garnish with basil, if desired.
