Spaghetti with avocado cream and fried Cabanossi

Ingredients for 2 servings:

  • 1 Cabanossi
  • 2 garlic cloves
  • 1 handful of basil leaves
  • 2 avocados, ripe
  • 4 tbsp lemon juice
  • 3 tbsp olive oil
  • 250g spaghetti
  • 180 g feta cheese
  • salt and pepper

First, finely dice the Cabanossi and peel the garlic. Thinly slice one clove and set aside along with 6 beautiful basil leaves. Slice or dice the feta cheese and set aside. Halve the avocados, remove the stones, and scoop out the flesh from the skin. Finely puree the avocados with the remaining basil, lemon juice, 2 tablespoons of olive oil, and the remaining garlic clove, and season with salt and pepper. Cook the spaghetti al dente according to the package instructions. Meanwhile, fry the Cabanossi and garlic slices in a little olive oil in a small pan. When the pasta is ready, remove about 4 tablespoons of the pasta water and stir it into the avocado sauce. Strain and drain the pasta. Now just toss the spaghetti with the avocado sauce and plate up. Finally, top with the Cabanossi, garlic slices, feta cheese, and basil leaves, and serve. With 2 servings, each serving has 605 kcal.
