Spaghetti with feta, spinach and shrimp

Ingredients for 2 servings:

  • 200 g whole wheat spaghetti
  • 300 g spinach, frozen
  • 1 garlic clove(s)
  • 1 tbsp pine nuts
  • 2 tsp olive oil
  • 100 g shrimp(s)
  • 50 g feta cheese
  • 1 tsp Italian herbs, frozen
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Low fat and low calorie

Bring water to a boil and cook the spaghetti for about 10 minutes until al dente. Peel and finely chop the garlic, then fry it along with the pine nuts in olive oil in a hot pan for about 2 minutes. Then add the thawed spinach and sauté everything. Add the shrimp to the spinach and heat through. Season with salt, pepper, and the Italian herbs. Crumble the feta cheese over the top with your hands. Drain the spaghetti and fold it in.
