Ingredients for 4 servings:
- 300 g spelt pasta, cooked
- 1 zucchini
- 1 bell pepper
- 3 spring onions
- 200 g prawn(s), cleaned and ready to cook
- 2 tbsp coconut oil
- 1 lemon(s), juice
- salt and pepper
- rosemary
- Thyme
- 1 garlic clove(s), squeezed
- 1 tsp, heaped stock powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Finely dice the vegetables and shrimp. Sauté the garlic clove in the coconut oil, then add the vegetables and shrimp and fry until the shrimp are cooked. Drizzle with lemon juice and season with herbs and spices. Add the cooked spelt pasta to the vegetables and fry briefly. Season again and adjust seasoning if necessary.
