Spaghetti with goat cheese and zucchini

Ingredients for 4 servings:

  • 1 kg zucchini
  • 3 tbsp olive oil
  • 300g spaghetti
  • 3 cloves garlic
  • 200 g cheese (goat cheese)
  • ½ bunch parsley
  • 6 sprigs peppermint
  • Salt and pepper, black from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the zucchini and fry in batches with the garlic. Season with salt and pepper. Cook the spaghetti in salted water until al dente and toss with the zucchini. Transfer everything to a baking dish and top with sliced ​​goat cheese. Bake in the oven preheated to 200°C for about 20 minutes. Finely chop the herbs. After 20 minutes, remove the baking dish from the oven, sprinkle the herbs over it, and mix everything well to distribute the cheese throughout the spaghetti and zucchini mixture. Return to the oven for another 10 minutes.
