Spaghetti with nut pesto

Ingredients for 4 servings:

  • 30 g walnuts
  • 30 g pistachios
  • 30 g pine nuts
  • 1 garlic clove(s)
  • 1 bunch of parsley
  • 100 ml oil
  • 30 g Parmesan, grated
  • salt and pepper
  • 400g spaghetti
  • salt water

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the nuts and seeds, then puree half of them with the garlic and parsley. Add the oil. Finely chop the remaining nuts. Mix the cheese and nuts into the pesto. Season with salt and pepper. Cook the spaghetti in salted water according to the package instructions. Drain, reserving 100 ml of the pasta water. Mix the spaghetti with the pesto. Stir in a little more pasta water, if desired.
