Ingredients for 1 servings:

  • 2 parts sesame
  • 1 part thyme, dried
  • 1 part sumac, ground

Instructions

North African spice mix

Toast the sesame seeds in a non-stick pan over medium heat for a few minutes without any fat (stirring or shaking constantly). Once cooled, finely grind or pound them and mix with the other ingredients. Sprinkle the aromatic powder over meatballs and vegetables; mixed with oil, it can be used as a dip. It is also spread on flatbread before baking. This mixture is known in North Africa, Turkey, and Jordan. Ground sumac (a dark red, almost red wine-colored, coarse powder) is most readily available in Turkish grocery stores.
