Spaghetti with scampi and arugula

Ingredients for 2 servings:

  • 250g spaghetti
  • salt water
  • 200 g scampi
  • 100 g arugula
  • 1 bowl of cocktail tomatoes
  • 1 pack of pine nuts
  • 1 clove(s) garlic
  • e.g. olive oil
  • pepper
  • possibly salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the spaghetti in salted water according to the package instructions. Finely chop the garlic and fry it with the scampi in plenty of olive oil until crispy. Add the tomatoes, arugula, and pine nuts and fry briefly. Add the spaghetti to the pan and mix well. Season with pepper and a little salt, if desired. If desired, add a little more olive oil at the end for flavor.
