Feta pasta with shrimp

Ingredients for 1 servings:

  • 100 g whole wheat spaghetti
  • 100 g shrimp(s)
  • 80 g light feta cheese
  • 1 handful of cherry tomatoes
  • 1 handful of arugula
  • 15 g pine nuts
  • 1 clove(s) garlic
  • 1 tbsp vegetable oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Protein-rich, filling meal

Press the garlic clove and let it simmer in a little oil for a few minutes. Meanwhile, roast the pine nuts in a pan without adding any oil and cook the whole-wheat pasta in salted water until al dente. When the pine nuts turn golden brown, add the oil and garlic mixture and the shrimp and fry. After about 5 minutes, add the halved tomatoes to the same pan. When the whole-wheat pasta is ready, add it and fry briefly, stirring constantly. Season with salt, pepper, and, if desired, chili/chili oil. Finally, crumble the feta over the mixture and mix everything together until evenly distributed and the feta is soft. Once everything is on the plate, fold in the arugula and enjoy. Bon appétit!
