Spaghetti with spinach, garlic and peppers

Ingredients for 3 servings:

  • 300g spaghetti
  • salt water
  • 250 g spinach, frozen
  • 1 garlic clove(s)
  • 1 bell pepper(s), red
  • ¼ liter vegetable broth
  • 2 tbsp, grated Parmesan cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the spaghetti according to the package instructions. Subtract two minutes from the cooking time; the spaghetti will cook for a while. Mince or crush 1-2 cloves of garlic and dice the bell pepper. Briefly fry both in a pan and deglaze with the vegetable stock. Add the frozen spinach and simmer on low heat. Stir in the grated Parmesan cheese and let everything reduce slightly. Now add the cooked spaghetti to the pan, mix well, and simmer for another 2 minutes.
