Spaghetti with strawberry and basil sauce

Ingredients for 4 servings:

  • 500g spaghetti
  • vegetable broth
  • 2 shallots or 1 large red onion, diced
  • olive oil
  • 2 cloves garlic, crushed
  • 2 pts. strawberries, quartered
  • 1 bunch of basil
  • oregano
  • Thyme
  • pepper
  • 1 pinch of salt
  • 150 g Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the spaghetti in a pot of boiling water seasoned with vegetable stock until al dente. Meanwhile, sauté the diced shallots or onions in olive oil until translucent. Add the garlic and sauté with the onions for one minute. Add the quartered strawberries to the pot and let them soften over medium heat (this takes about 3-4 minutes). Blend the onion, garlic, and strawberry mixture with an immersion blender until smooth. Set aside some fresh basil and add the rest to the pot with the other seasonings. Let the sauce simmer over medium heat for another 2-3 minutes. Plate the spaghetti and top with the strawberry sauce. Sprinkle with some fresh basil and freshly grated Parmesan cheese.
