Spaghetti with tomatoes and mozzarella

Ingredients for 2 servings:

  • 240 g spaghetti
  • salt water
  • 4 m.-sized tomatoes, quartered or better quartered
  • 2 m.-sized onion(s)
  • 2 cloves garlic
  • 1 pack of mozzarella (buffalo mozzarella), cut into small cubes
  • 1 tbsp balsamic vinegar
  • some tomatoes, dried in oil
  • some salt and pepper
  • some basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the spaghetti in salted water according to the package instructions. About 5 minutes before the pasta is done, sauté the onions and garlic in a little oil in a pan. Once the onions are translucent, add the chopped tomatoes and a few sun-dried tomatoes with 3-4 teaspoons of the oil. Sauté for another 3 minutes, then add the cooked (not rinsed) pasta, some basil, and the chopped buffalo mozzarella. Season to taste with salt, pepper, and balsamic vinegar. Serve as soon as the mozzarella is stringy, garnishing with basil if desired.
