Spaghetti with zucchini, pepper and tomato sauce

Ingredients for 4 servings:

  • 500g spaghetti
  • 1 onion(s)
  • 1 zucchini
  • 1 bell pepper(s)
  • 1 can/n tomatoes, chopped
  • 3 tbsp cream
  • 3 tbsp yogurt
  • ½ handful of basil
  • Parsley
  • 1 pinch(s) of cayenne pepper
  • pepper
  • Salt
  • Mozzarella for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegetarian and super easy

Dice the onion, zucchini, and bell pepper. Briefly fry the onion in a pan with a little olive oil, then add the zucchini and bell pepper and sauté for a few minutes. Then add the tomatoes, bring to a boil, and simmer for a while. Bring a pot of water to a boil, add salt, and cook the spaghetti until tender. Towards the end of the spaghetti’s cooking time, add the cream and yogurt to the sauce and season to taste. Dice the mozzarella. Drain the spaghetti water and divide the spaghetti among plates, pour the sauce over it, and garnish the dish with the mozzarella.
