Ingredients for 4 servings:
- 400 g pasta (spaghettini)
- 1 bunch of spring onions
- 1 lemon(s)
- 2 tbsp butter
- 200 g sheep’s cheese
- 200 ml cream, low-fat
- salt and pepper
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Cook the spaghettini according to the package instructions. Meanwhile, slice the spring onions. Reserve some of the green parts for garnish and cut them into very fine strips. Halve the lemon, squeeze the juice from one half, and thinly slice the other half. Melt the butter in a pan and sauté the spring onions. Roughly crumble the feta cheese and purée all but 3 tablespoons with the lemon juice and cream. Pour into the pan with the spring onions and simmer briefly. Season and toss with the spaghettini. Garnish with the remaining strips of spring onion, the 3 tablespoons of feta cheese, and the lemon slices.
