Spanish rice the American way

Ingredients for 4 servings:

  • 2 tbsp vegetable oil
  • 200 g long grain rice
  • 1 large onion(s), chopped
  • ½ large green bell pepper(s), finely chopped
  • 500 ml water
  • 1 can tomato(s), approx. 500 ml, with juice
  • 1 chili pepper(s) (jalapeno), finely chopped
  • ½ tsp chili powder or cayenne pepper, maybe a little more
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Spanish Rice

Heat the oil in a saucepan over medium heat. Sauté the rice, onion, and bell pepper until the onion is soft. Add the water, tomatoes and their juices, and jalapeno pepper. Season with chili powder or cayenne pepper and salt. Cover the pan and simmer gently for 30 minutes (adding a little more water if necessary) until the rice is tender and the liquid is almost gone. Serve with well-seasoned sausages, pork, and poultry.
