Ingredients for 3 servings:

  • 2 kg spare ribs
  • Sea salt, coarse
  • pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

These are probably the simplest spare ribs for true fans. I had them at a Portuguese friend’s house. Sprinkle plenty of sea salt from a grinder over the spare ribs. Sprinkle with black pepper as well. Roast/grill in the oven at 180°C. Turn the ribs often and let them become quite crispy. It’s best to get spare ribs (skimmed ribs) directly from the butcher, as they really do make the perfect ribs. Oh, and of course, this is NOT a proper recipe, but I think that these ubiquitous spare ribs don’t necessarily appeal to everyone (mine didn’t either, of course).
